تعتبر عمليات فرز أو تصنيف التمور ، من العمليات المهمة للغاية ، قبل الغسيل والمعالجة بالماء ، فالتصنيف يتم عادة يدويا وبواسطة عمال مدربين على عزل التمور الجافة والغير صالحة أو التمور المتعفنة والتي لها دور سلبي في حال بقائها مع التمور الأخرى الصالحة ، مما ينقل العفن إليها بسرعة ، فيؤثر تأثيرا مباشرا على باقي التمور الصالحة للإستهلاك.

ورغم أن عمليات فصل التمور الغير صالحة مهمة للغاية ، فأن عمليات تصنيف الأحجام لحبات التمر ، تبقى ذات أهمية مرتفعة أيضا ، وذلك لتحسين فرص البيع والتسويق.
