وحدة تعقيم التمور جزء مهم  من مصنع معالجة وتعليب التمور ، لها دور كبير في تعقيم التمور وقتل جميع الحشرات واليرقات والبيوض العالقة به قبل البدء في عمليات الغسيل والتنظيف والتعبئة ، هذه الوحدة عبارة عن حجرة اسمنتية ليس لها سوى منفذ واحد ( 100 × 200 سم ) للدخول إليها.
تتم العملية بتفريغ الحجرة من الهواء بشكل كامل ، بعد رص سلال التمور ضمن الحجرة وبتنسيق متساوي يحقن غاز ثاني أكسيد الكربون ليحل محل الهواء المفرغ وبشكل يتساوى من الضغط الجوي الطبيعي وبدرجة حرارة 30 مئوية فوق الصفر ورطوبة  بين 50 إلى 60 % ، تستمر العملية لمدة 24 ساعة متواصلة.
